Personal, I prefer soft over hard. This is when the yolk goes from a liquid to solid (sounds as if I was back in school). It's easier to clean up (ideal for serving children or in sandwiches) and I never liked the texture of runny egg yolks. Want to eliminate the guesswork of getting that perfect yolk consistency. Are over-hard eggs healthy?

The yolks of eggs are rich in lutein and Zeaxanthin which help to promote eye health. Also, they contain vitamin D for the immune system and bones as well as choline to help your metabolism and liver function. The longer you cook the eggs, the less nutrients they contain. However, I still think that these are healthier than hard-boiled eggs.
